Hmmm, must run to the fruit & veg for onions, as it turns out. First though the garlic must finish roasting, so I will bum around on the internets till it's done.

Today was pretty freaking awesome, despite sleeping right through my alarm. Shopped with coworkers at lunch, confirming that I am rocking christmas this year. I LOVE having both inspiration and $$ at the same time. Discovered that I have 2 more days of vacation than I thought I did, so I can take almost 2 weeks off for the holidays. There may yet be a "...oh wait..." on that from HR, but until they figure it out, I don't really care.

Mmmmm, mushed-up roasted garlic.

Yay, well done. Sounds like a good day. Mmm, now I crave roasted garlic. Maybe i will have some with my baked potato later on...

I learned from Canadian Living that if you saute garlic cloves in olive oil in a covered pan on medium-low heat, it takes about 15-20 minutes (with regular shaking of the pan) to achieve golden, mushable, much-like-roasted garlic.
